  • 3/4 cup palm sugar (Gula Melaka)
  • 1/4 cup water
  • 1 pandan leaf, tied into a knot (optional)

Cooking Steps

  • In a mixing bowl, whisk together flour, coconut milk, eggs, sugar, salt, and pandan juice or food coloring until the batter is smooth. Let it rest for 15 minutes.
  • For the filling, combine the palm sugar, water, and pandan leaf in a saucepan over medium heat. Stir until the sugar is completely dissolved and the mixture has thickened slightly. Remove the pandan leaf and add the grated coconut, cooking for another 2-3 minutes until the mixture is sticky. Set aside to cool.
  • Heat a non-stick pan over medium heat. Pour a small amount of batter into the pan, swirling it to form a thin pancake. Cook until the edges start to lift from the pan, then flip and cook for a few more seconds. Remove and place on a plate.
  • Place a spoonful of the coconut filling onto the center of each pancake. Fold both sides over the filling, then roll it up to form a neat parcel.
  • Repeat with the remaining batter and filling, placing the finished Kuih Dadar on a serving platter.
  • Serve the Kuih Dadar immediately, or store them in an airtight container to enjoy later.
